A soft cheese with blue-green mold overgrowth.
It is AOP* cheese, made from cow's milk in a wonderful mountain land in the Auvergne region.
It matures from 6 to 8 weeks. It has a spicy smell and a sharp, clean taste in which herbs are felt.
Gray-blue mold pockets and veins occur in the cheese.
Over time, the skin of the cheese becomes sticky and covers with gray-brown molds, and the taste
becomes more and more intense.
Table cheese, perfect for a cheese board, goes well with salads with a nut, chicory and apple salad.
Perfect for sauces and pasta.
