Super Easy Potato Salad

So easy that your pre-teen can make it

Only 7 ingredients + Salt & Pepper

Whether it’s hot or cold outside – potato salad is a great side dish for any meal. 
It’s made from simple ingredients (all available in our SHOP 😉), super easy to make, and very visually appealing at the table.

I made this in under 20 minutes and despite the red onions – my twelve year old daughter loved it.

This was enough for 3-4 people.  If you want to have left-overs, just double the quantities of the ingredients and leave the rest in the refrigerator.

This is a cold salad so whatever is sitting in the refrigerator will be perfectly fine the next day.

If you wanna hold onto it for longer, I’d suggest putting some kind of cover over the top so the eggs don’t get funky.

So here you go…

INGREDIENTS

 

🔪 1kg of Young Potatoes

🔪 1 large Red Onion

🔪 a handful of Dill

🔪 a handful of Parsley

🔪 2 Fresh Eggs

🔪 2 Greenhouse Cucumbers

🔪 Vegan Garlic Mayonnaise from Frytki+Sos

1 – Start by washing the potatoes & pealing them. Don’t worry, they don’t have to be perfectly peeled, a little bit of skin add a bit of texture.  Then, chop them into respectable little pieces and throw them into a pot of boiling water for ~10 minutes.

2 – Chop the cucumbers, red onion, parsley, and dill into small pieces and put them to the side.

3 – You can let the red onions sit in hot water for a few minutes to get the ‘sting’ out.  If you use a Hario pour over kettle – it’ll look fancy.  You can tell your friends about it while you ride your fixed gear bike down to the local freegan market located behind Biedronka.

4 – Boil 2 eggs, then cool them down under hot water.  Once they’re cool, peel them and chop them into small pieces.

5 – Get the potatoes out of the hot water, and throw everything into a large bowl.  Add some salt & pepper and mix the hell out of it.

It’s ready to serve
